cmake: Follow-up to r1936349, do not use `CMAKE_INSTALL_PREFIX` for the
destinations.

* CMakeLists.txt
  (cache variables):
    Use variables provided by `GNUInstallDirs` module rather than
    `CMAKE_INSTALL_PREFIX` for paths to install bindings.
